Selection
The poultry workers in our farms select Export Quality Eggs. Upon selection, the eggs are brought to the Processing Center.
Grading
There are several criteria for grading eggs, they are as follows:-
- Weight and size : All large eggs have to weight between 50-55 grams each, any egg below or above the specified weight is rejected
- Hair Crack Eggs : These eggs have a thing shell and thus a thin hair crack shows up on their shell. They can get damaged during transport, causing the egg to spill over and spoil other eggs as well, these types of eggs are rejected
- Dirty Eggs : All eggs that remain dirty even after cleaning are rejected. More on cleaning is discussed below
Cleaning
While grading, the ongoing process of cleaning also takes place, which helps remove further rejected eggs. Eggs are cleaned to remove any dirt, bacteria, etc. that is visible on the egg. The cleaning is done with Hydrogen Peroxide, approved by the Department of Agriculture, India. As mentioned in the earlier point [Grading (3)], if these eggs are still dirty after cleaning them with Hydrogen Peroxide, then they are immediately rejected.
Inking
Once Grading and Cleaning is completed; the eggs are loaded onto Pulp Chemical Trays. These trays are Waterproof and have a holding capacity of 30 eggs per tray. These trays are then put onto Egg Coding Machines, to print the production and expiry date on each egg. Food Grade Ink in different colors is used to print these dates, as per the Health Department rules of the importing countries.
Packing
The Pulp Trays, holding the stamped eggs, are packaged in multicolor 5 ply cartons. 12 trays of eggs, i.e. 360 eggs are packed in each carton. Each carton is imprinted with Production and Expiry Dates as well as Nutritional Facts.
Stuffing
Empty, pre – cooled 40’ Containers are loaded with each having a holding capacity of 1312 cartons. Each empty container is pre-cooled to temperatures between 2 Degrees Celsius to 5 Degrees Celsius. The cooling once started is not stopped until the container reaches its final destination. |
